Big news!

I have some rather big news! I’ve been working as a professional pastry chef for just over two months now and I am absolutely loving it! I work at the Bilboquet making everything from brownies and carrot cakes to cookie dough for the cookie dough ice cream to decorating ice cream cones and making special bowls to serve ice cream in. It’s awesome! As you can imagine, this has changed my routine at home. I still bake every week or every other week, but since I’m now used to baking in a work stance I tend to forget to take pictures of what I bake at home until it is too late and it is eaten. I really want to get back into the habit of taking pictures and posting them here to share them with you.

And I have some more big news! I have been accepted in the pastry program at the ITHQ! It has taken me three tries to get in, but I did it! I will start my classes at the end of August and I am so excited to start! As you can clearly see by my constant use of exclamation marks! I will of course say more about it when I start my classes.

I have been making my own bread every week since February. I have improved greatly and I’m really proud of the bread I make these days. I use active dry yeast, but on the side I’m still working on my own home made yeast and eventually I want to make bread using my own yeast. In the mean time though, I’m very satisfied with these!
