Cakes, pies and other treats

Hi everyone! I know, I know, it’s been a long time since I’ve posted something new. With the Holidays and moving across the country, it’s been hard to find the time to write. Now I’m taking the time though. I’ve baked a few things since December. This beautiful flourless chocolate cake from Baked was for our New Years Eve party.

I made this sour cherry slump (also from Baked) for our first breakfast of 2012. Quite tasty! You can also see the nice double skillet cooker I got for Christmas. Can’t wait to bake bread with it!

This blog is quickly coming up on it’s two year anniversary. Yes that’s right! I’ve been doing this for almost two full years now! I’m having so much fun baking, experimenting with different recipes and taking pictures of it all to share! Writing does not come easily to me though. I’m finding it hard to come up with something interesting to say every week. So I’m changing the format of this blog a bit. I’m going to focus more on the baking and taking pictures aspect of it, while the written part will be shorter. I’m still going to write up tips and tricks, things I’ve discovered doing a recipe and where I got the recipe from or the recipe it self, I’m just going to put less pressure on myself to come up with paragraphs of things to say. I hope you will still find this blog interesting and come see what I bake. Hopefully even be inspired to bake and try these recipes yourself!

This is another great recipe from Baked. I love that book! It’s the chocolate bourbon pecan pie. Smells heavenly!

Finally, the dark chocolate macaron, recipe from Le Larousse du Chocolat, also a great book. A little tip working with egg whites: always use real eggs and separate the whites from the yolks. The cartons of eggs whites just don’t whisk up as nicely as the real thing.

Red wine chocolate cake from Smitten Kitchen

I follow more and more baking and cooking blogs (I’ve updated my links page to reflect this). At the beginning of the week, the talented Smitten Kitchen posted a recipe for a red wine chocolate cake. I couldn’t resist, I had to try it! I mean, red wine IN chocolate cake? How can it get any better than that! The recipe says to use any red wine you like. Well, in the pas year I’ve started making home made wine with some friends. It’s super easy and fun. I have a few bottles left so I thought I’d use one of my own bottles to make this cake completely home made all the way down to the wine! I’ve made it cupcake size for 16  cakes, without changing anything, but lowering the baking time down to 18 minutes.

Guinness and chocolate

This Thursday is St-Patrick’s day! I thought it was the perfect occasion to try Guinness and chocolate cupcakes! I took the recipe for the cake from Design*Sponge, a lovely design blog. I found the recipe was very easy and quick to make. Its very good on top of it too. The cake recipe makes about 22 to 24 cupcakes and are ready after 20 minutes in the oven. I replaced the cream cheese icing by a simple vanilla italian buttercream. I thought it would make it a bit lighter. I decorated the cupcakes with a fondant shamrock to make them even more appropriate to the upcoming St-Patrick’s day festivities.

Trio of cupcakes

This week I have multiple flavours to make up for the missing weeks. Since we moved, we had a house warming party with a bunch of friends and I decided to make more than one flavour of cupcakes, but with a unifying theme. The three flavours were Baileys and chocolate, Amaretto sour, and Grand-Marnier with cinnamon. They were a big hit!







I’m sorry to say though that I don’t have a clear and precise recipe. I improvised a lot without really measuring. I started by doing one big mix of butter, sugar, eggs and a bit of flour that I split in three. I did the same with the flour, baking powder, and baking soda mix. I then added the different alcohols to the three batter, mixed it in, and added the flour mix. After mixing the flour in, I realized the alcohol made the batter a lot more liquid then I had anticipated. I then added flour until I got the texture I wanted.







Here is what I started with:
- 1 1/2 stick of butter
- about 1 3/4  cups of sugar
- 2 eggs
-about 1/3 cup of Baileys
-about 1/3 cup of Amaretto
-about 1/3 cup of Grand-Marnier
-2 cups of flour
-3/4 tsp of baking powder
-1/2 tsp of baking soda
-about 1/4 cup of extra flour per batter mix after seeing the alcohol made the batter more liquid then I anticipated







I did the same principal for the icing: made one basic batch that I divided in three and flavoured separately.  I used 1 1/2 stick of butter and about 1 3/4 of icing sugar (or as much as you want until you get a texture you like). I added some yellow food colouring and 3/4 tsp of lemon extract for the Amaretto sour cupcake (but I should have only put 1/2 tsp, the taste of lemon was too strong compared to the Amaretto taste of the cake), 2 tbs of cocoa powder for the Baileys and chocolate cupcake and 1 tsp of vanilla for the Grand-Marnier and cinnamon cupcakes.







A little note on the Grand-Marnier and cinnamon cupcakes. When I was putting the batter in the paper cups, I only put half of the batter in and the sprinkled some cinnamon on the batter before adding the rest on top. I also sprinkled some cinnamon on top after icing the cupcakes.







The most popular one was Baileys and chocolate, then Amaretto sour, and Grand-Marnier with cinnamon came in third place, but they were all good :)
